For those who have never tried kale….. Go buy some now! I tried kale for the first time today. I know it has been the craze as of late. I guess you can say I am jumping on the band wagon. I made a wonderful salad tonight with kale, quinoa, black beans, chick peas, sweet peas and celery with a cream cheese/tomato basil dressing. Most of my food adventures happen when no one else is home. This way if it tastes terrible, no one knows it ever existed. Tonight, I wasn’t disappointed. Along with this wonderful salad, I made kale chips. Let’s just say I am giving up potato chips for good. Life gives us opportunities to take risks. Although mine was a small one, it paid off. My diet will never be the same again. My life is about to take a huge turn as I have just completed my bachelor degree and have signed my first “grown-up” contract with an amazing company. Again, my life will never be the same again. To those afraid to take risks, even something as small as trying kale, go do it. Take that risk! You only have one life, so go live it while you can! I certainly will be while I munch on my kale chips ❤️

Every year, thousands of animals are brought to shelters. All of them need homes. Sadly, 41% of cats alone will be euthanized instead. My little silver tortie affectionately known as “Meep” was one of the thousands of shelter cats last year. She was brought to the humane society because she was “broken”. When she was a kitten she had broken her hip. When I found her at the humane society, she was scared and alone in a tiny cage. From the moment I took her out of that cage and held her in my arms, I knew that she was my little girl. It was one of the most powerful experiences of my life. She just looked up at me with this knowing look. It’s as if she knew I was the one who would take her out of this place. Most people I meet tell me that animals are just pets. They tell me that I care too much. As far as I’m concerned, “Meep” is part of my family. She isn’t just some dumb cat. She is my roommate, my late night cuddle buddy, my foot warmer, and friend. She eagerly waits for me to come home from work, always ready to play. Thousands of cats are brought to shelters each year. All of them want the chance to have a forever home where they will be safe, have access to food, water and treats. Most of all, they want to be loved. Consider adopting a shelter animal. It will save a life and change yours in ways you never believed possible.❤️
